Blueberries are Excellent for your Health

Blueberries are Healthy and Potentially Life-Saving

I have always loved blueberries and once I learned of their health benefits, I eat them more often. They are a cute little fruit, the only one that is blue.

They do not look like the characters in The Blue Man Group, but they are the same color and I am guessing that their inspiration came from the color of the blueberry.

I lived in Ohio and although there were blueberries there, the majority grew on Indiana blueberry farms.

They can be a little tart but one way I eat them is to use them in my Vitamix blender. These blenders help you put many items into them and end up with delicious tasting smoothies. If you do not have one, I would highly recommend one. They make it easy to eat healthy.

Very Merry Blueberry

We didn't eat a lot of blueberries growing up and when we did get them, I found them to be a little tart for my taste. As I got older, I have grown to love them.

The only exposure I had to them for many years was in my blueberry waffles, pancakes or muffins. Once in a while, we would have them fresh on our cereal. I did that for a while until I learned that mixing them with milk can destroy their antioxidant properties.

Now, I buy them in jams and jellies and also frozen. I prefer the frozen blueberries over fresh because many times the fresh are not as ripe.

I put blueberries in my Vitamix smoothies and the blender breaks the skin and releases the healthy properties.

You can eat them plain but beware, they can stain the teeth. If you get stains, a quick way to remove them is to quickly brush after eating by using a paste mix that includes a tsp of hydrogen peroxide, ¼ tsp of baking soda and ¼ tsp of sea salt.

Of everything I own, this would be the most difficult for me to give up. I first saw the Vitamix at the Ohio State Fair when I was a child. I remember them throwing a bunch of things in it and it would blend them to liquid. They then passed around the little cups and the drink was great. My parents bought one and about a year ago, I bought my own. This machine is guaranteed for 7 years and also has a lot of wonderful accessories with it. It breaks down the vegetables, fruits and other items. It will make breads, soups and my favorite, fruit and vegetable smoothies. If you don't own one, I would highly recommend getting one. If you have a health conscious bone in your body, you need this.

Yields: 6

Ingredients

  • Package of 6 Mini Graham Cracker Pie Crusts
  • 2 Packages of Cream Cheese
  • 1 Cup of Sugar or Xylitol (for diabetics)
  • 1 -2 Cups of Fresh Blueberries
  • Whipped Topping (Opitonal)

Instructions

  1. Put the cream cheese, sugar (or Xylitol) and blueberries in a blender, Magic Bullet or Vitamix and blend until smooth.
  2. Using a spatula, put the mixture into the ready made graham cracker pie crusts
  3. Refrigerate until serving
  4. Add whipped topping if desired
